Broccoli Beef

Ingredients

Marinated beef
  • 1 lb beef flank, cut into 1/4 inch thick strips (or buy precut)
  • 1 tbsp shaoxin wine
  • 1 tbsp soy sauce
Slurry
  • 3 tbsp soy sauce
  • 2 tsp cornstarch
  • 3 tbsp shaoxin wine
  • 1/3 cup chicken stock
  • 1/4 cup oyster sauce
  • 1 tbsp sugar
  • 1 tsp sesame seed oil
Alium mix
  • 3 tbsp ginger garlic paste
  • 3 green onions, chopped (whites only)
Other
  • 4 tbsp vegetable oil
  • 1 pound broccoli florets

Recipe

  • Marinate the beef 30-60m in advance
  • Meanwhile, combine the slurry in a bowl - starting by mixing soy sauce & cornstarch, and then adding the rest in.
  • When ready, heat the wok, add oil, stir fry the beef until slightly crisp/tender.
  • Remove the beef, heat the wok and add oil again, and stir fry the broccoli next, cook until tender and charred, about one minute.
  • Next, return the beef, and also add the alium mix, toss for 30s.
  • Add sauce, and scallion greens, toss for another minute, and remove
