Broccoli Beef
Ingredients
Marinated beef
- 1 lb beef flank, cut into 1/4 inch thick strips (or buy precut)
- 1 tbsp shaoxin wine
- 1 tbsp soy sauce
Slurry
- 3 tbsp soy sauce
- 2 tsp cornstarch
- 3 tbsp shaoxin wine
- 1/3 cup chicken stock
- 1/4 cup oyster sauce
- 1 tbsp sugar
- 1 tsp sesame seed oil
Alium mix
- 3 tbsp ginger garlic paste
- 3 green onions, chopped (whites only)
Other
- 4 tbsp vegetable oil
- 1 pound broccoli florets
Recipe
- Marinate the beef 30-60m in advance
- Meanwhile, combine the slurry in a bowl - starting by mixing soy sauce & cornstarch, and then adding the rest in.
- When ready, heat the wok, add oil, stir fry the beef until slightly crisp/tender.
- Remove the beef, heat the wok and add oil again, and stir fry the broccoli next, cook until tender and charred, about one minute.
- Next, return the beef, and also add the alium mix, toss for 30s.
- Add sauce, and scallion greens, toss for another minute, and remove
