Cardamom Saffron Lassi

Ingredients

  • 20 cardamom pods
  • 10 saffron strands
  • 1/2 cup milk
  • 1 cup whole-milk yogurt
  • 3 oz heavy cream (optional)
  • 1/3 cup powdered sugar
  • 1 drop of green food coloring (very optional)

Recipe

  • Crush cardamom pods, take out the seeds and discard shells
  • Microwave half of the milk in a bowl to near boiling, then steep the cardamom & saffron in it for 5 minutes
  • Strain out the cardamom & saffron
  • Blend all of the ingredients together
  • Chill for at least a couple hours, serve over ice
