Crustless Chorizo Quiche
Ingredients
- 1/2 large onion, chopped or sliced
- 1 roma tomato, chopped (can sub cherry tomatoes)
- 1 tsp garlic powder, onion powder, salt, MSG (optional-ish, depends on your chorizo)
- 8 oz cheddar or other shredded cheese
Recipe
- Cook the spinach, and put aside.
- Brown onions, then add and cook the chorizo, and bell peppers in the same pan.
- In a large bowl, mix eggs, heavy cream, spices, and cheese.
- Add the other cooked ingredients, then add to a greased casserole dish (around 9x13 or 8x8 should work)
Notes
- Easy to swap out veggies - spinach, tomato are pretty optional.
- If you swap out the meat, you might wanna work more on the spices, but with chorizo, the spices are pretty inconsequential.
- For Keto, using this data, I estimate this recipe at 3230 calories + 45 net carbs, making around 8 servings at 403 cal + 5.6 net carbs per serving.
