Sweet & Spicy Gochujang ChickenSweet & Spicy Gochujang Chicken
Ingredients
- 8 boneless skinless chicken thighs (~3 lb, can sub bone-in)
- 3-4 tbsp of minced garlic (jarred, ~two heaping spoonfuls. can sub with 2-3 minced cloves if fresh)
- 3-4 tbsp of gochujang (~two heaping spoonfuls)
Recipe
- Score the chicken, deeply and against the grain
- Mix all the ingredients in a bowl, add chicken and ensure it is thoroughly covered in marinade
- Cover the bowl, let rest for at least a few hours, ideally overnight or longer.
- Lay chicken on a wire rack, over a foil-covered pan. Reserve any excess marinade.
- Broil chicken on either side for ~3-5 minutes, this burns easily, so keep an eye and flip when it’s getting close.
- Brush chicken with leftover marinade, and bake at 400F for upto 10 minutes more, depending on the thickness of the chicken.
