Horchata

Ingredients

  • 6 cups water
  • 2 cups milk
  • 2/3 cup white sugar
  • 2 cups uncooked long-grain rice (eg: jasmine or basmati)
  • 1 tbsp vanilla extract
  • 1 1/2 tbsp ground cinnamon
  • 1-2 cinnamon sticks (optional)

Recipe

  • Put the rice, cinnamon sticks (optional) and 2 cups of water in a blender, then let it sit out for a couple hours, and then refrigerate up to overnight.
  • Strain the mixture. Add sugar, milk, rest of the water, vanilla extract and ground cinnamon.
  • (Optional) Refrigerate for upto one more day, to get a creamier consistency. You can serve immediately too though, at the cost of a slightly waterier drink.

Notes

For a mildly alcoholic drink (<5% ABV), I’d recommend mixing in a few shots of baileys, and one shot of white rum.
