Sandwich Spread

Ingredients

  • Mayo
  • Carrot (finely grated)
  • Onion (finely minced / food processed)
  • Gochujang
  • Peri-peri sauce

Notes

Consider a simple sandwich with sliced bread, lettuce and a deli meat (+ condiments) - it’s often somewhat lackluster. Sandwich spread is the difference between a lazy sandwich being an okay meal vs something you could look forward to and enjoy.
It’s pretty easy to make a bunch and put it away. This recipe isn’t super important to stick to, but if I had to note some important genres of ingredients, they’d be as follows:
  • Mayo: It’s the core, and it’s hard to replace. You could consider mixing in some other dressing (maybe ranch or so) to kickstart the flavor.
  • Heat: Something spicy - I like using a hot sauce, and gochujang is often one of my favorite additions. But preetty much any hot sauce or spicy chili paste could work here!
  • Complexity: Add more complex/savory notes - I think both miso or gochjuang could play this role, and there’s plenty of others. You could also consider tossing in any weird spice mix or sauce you have around.
  • Veggies: I love carrot & onion - I’d also consider adding celery or cabbage. I think these add a texture, sweetness and body that’s hard to achieve with a series of condiments + spices alone.
    • This is the most important trick to the recipe imo, adds a lot more “weight” & complexity to the sandwich.
