Tiramisu
A non-traditional tiramisu recipe that uses a lighter, airier cream.
Ingredients
- 1 1/2 cups heavy cream
- 8 oz mascarpone cheese
- 1/3 cup granulated sugar
- 1 tsp vanilla extract
- 2 cups of decaf instant coffee, cold (made at 2-3x usual strength)
- 1.5 oz bourbon (or 3 oz Kahlua)
- 7 oz ladyfinger cookies (Amazon)
- cocoa powder for garnish
Recipe
- Prepare the coffee & let it cool
- With an electric mixer, beat heavy cream until soft peaks, add sugar & vanilla, beat until stiff
- Fold in mascarpone cream
- Find a casserole dish, approx 8x8 or smaller. You might want to test that half your cookies fit fine in a single layer. It’s fine to err slightly small, and leave out a couple cookies if needed.
- Mix coffee & bourbon, and pour into a shallow bowl or plate.
- Briefly dip half the ladyfingers in the coffee mixture, wetting each side only briefly. Then place them in a single layer in the casserole dish.
- Dollop over half the cream mixture over the cookies, then flatten out with a spatula
- Add another layer of cookies, and then add the rest of the cream mixture
- Cover and refrigerate for at least a few hours, upto 2 days
- Dust with cocoa powder before serving
Notes
- You won’t need 2 cups of coffee, but I prefer to err on the high side as it makes it easier to dip.
