Chinese Eggs & Tomato
Ingredients
Egg mixture
- 4 eggs
- 1/4 tsp salt (or a few turns of a salt grinder)
- 1/4 tsp ground pepper (or a few turns of a pepper mill)
- 1/4 tsp MSG
- 1 tsp shaoxin wine (maybe sub w/ black vinegar? or other cooking wine)
- 1/2 tsp sesame oil
- 1 tbsp cooking oil (for frying)
Tomato mixture
- 4 roma tomatoes (cut into quarters as wedges)
- 1/2 tsp MSG
- 1/2 tsp salt
- 1 tsp sugar
- 1/4 cup water (add more as needed)
- 1 tbsp cooking oil (for frying)
Recipe
- Beat together the egg mixture (eggs, 1/4 tsp salt, 1/4 tsp pepper, 1/4 tsp MGS, 1 tsp shaoxin wine, 1/2 tsp sesame oil)
- Heat a wok up with 1 tbsp oil till smoking (or just a normal pan)
- Pour the egg mixture in, scramble quickly, and then set aside once cooked
- Add another tbsp oil, then add in the tomatoes, stir fry for a minute
- Add the remaining ingredients (1/2 tsp MGS, 1/2 tsp salt, 1 tsp sugar, 1/4 cup water), and stir.
- Add scrambled eggs, mix thoroughly, cover and let cook for ~2 minutes, until tomatoes are softened
- Uncover and cook on high heat until sauce reaches your desired thickness
