Pesto Yogurt Chicken
Ingredients
- 2-3 pounds boneless chicken thighs
- 1/2 cup full-fat yogurt
- 1/3 cup pesto
- 1 tsp salt
- 1 tbsp lemon juice
- pepper to taste
- parmesan
- additional pesto to brush
Recipe
- Score chicken, mix with all ingredients, marinate for 8-48h
- Broil at high for ~10 minutes on the first side, and then ~6-8 minutes.
- Brush on additional pesto after flipping
- If you prefer less char, you may want to further bake at 350F until temp is 160F
