Pesto Yogurt Chicken

Ingredients

  • 2-3 pounds boneless chicken thighs
  • 1/2 cup full-fat yogurt
  • 1/3 cup pesto
  • 1 tsp salt
  • 1 tbsp lemon juice
  • 2 tbsp ginger-garlic paste
  • 2 tsp MSG
  • pepper to taste
  • parmesan
  • additional pesto to brush

Recipe

  • Score chicken, mix with all ingredients, marinate for 8-48h
  • Broil at high for ~10 minutes on the first side, and then ~6-8 minutes.
    • Brush on additional pesto after flipping
    • If you prefer less char, you may want to further bake at 350F until temp is 160F

Notes

  • You can air fry these too - try at 400F, around 13-14 min total, flipping once midway through
  • Modified in Mar 2026: +2 tbsp ginger garlic paste, +2 tsp MSG - makes it much savorier and tastier
