Five-Spice Yogurt Chicken

Ingredients

  • 2-3 pounds boneless chicken thighs (or ~4-5 pounds bone-in thighs/legs)
  • 1/2 cup full-fat yogurt
  • 2 tbsp chinese five-spice
  • 2 tbsp ginger-garlic paste
  • 2 tbsp sambal olek (or other chili paste)
  • 1 tbsp soy sauce
  • 1 tsp fish sauce
  • 1 tbsp lemon juice
  • 1 tsp black vinegar
  • 1 tsp salt
  • pepper

Recipe

  • Score chicken, mix with all ingredients, marinate in the fridge for at least 8h, upto 2 days
  • Broil at high for ~10 minutes on the first side, and then ~6-8 minutes on the other side, until moderately charred.

Notes

  • This is very similar to my Tandoori Chicken & Pesto Chicken recipes - it uses the same (boneless thighs, yogurt, ginger-garlic, lemon juice) base, but imo is worse rn.
  • I think it’s currently a little underspiced or feels less savory than I’d expect. I’ve been looking for changes, potentially considering: a) adding fresh minced garlic, b) finding a better source of five-spice, c) adding sichuan pepper powder, d) perhaps just upping spice quantities
